Ingredients

- 2 medium sweet potatoes
- 1 pound ground turkey
- 1 cup black beans, rinsed
- 1 cup corn, frozen or fresh
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 avocado, diced
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork.
- Bake sweet potatoes for 45-60 minutes until tender.
- In a skillet, cook ground turkey over medium heat until browned.
- Add black beans, corn, chili powder, cumin, salt, and pepper to the skillet.
- Cook for 5-7 minutes until heated through.
- Slice the baked sweet potatoes in half and scoop out a little flesh.
- Stuff the sweet potatoes with the turkey mixture.
- Top with diced avocado and cilantro before serving.

- Add cheese for extra flavor if desired.
