Ingredients

  • 1 cup dried navy beans, soaked overnight
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 bay leaf
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté onion, carrots, and celery until soft.
  2. Add garlic and cook for another minute.
  3. Stir in the diced ham and soaked beans.
  4. Pour in chicken broth and add bay leaf and thyme.
  5. Bring to a boil, then reduce heat and simmer for about 1.5 hours.
  6. Season with salt and pepper to taste.
  7. Remove bay leaf before serving.
