A hearty ham and bean soup that’s perfect for a cozy meal.
Ingredients

- 1 lb ham, diced
- 1 cup dried navy beans, soaked overnight
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 bay leaf
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- In a large pot, sauté onion, carrots, and celery until soft.
- Add garlic and cook for another minute.
- Stir in the diced ham and soaked beans.
- Pour in chicken broth and add bay leaf and thyme.
- Bring to a boil, then reduce heat and simmer for about 1.5 hours.
- Season with salt and pepper to taste.
- Remove bay leaf before serving.
Notes
- Soaking beans overnight helps with cooking time.
- Leftovers can be stored in the refrigerator for up to 3 days.
