Ingredients
Scale
- 2 cups of carrots, peeled and chopped
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
Instructions
- Boil the carrots in salted water until tender, about 15 minutes.
- Drain the carrots and return them to the pot.
- Add olive oil, salt, and black pepper.
- Slightly mash the carrots with a fork or potato masher.
- Mix in fresh parsley before serving.

- Adjust the seasoning to your taste.
- Serve warm as a side dish.
