Description

A filling dish combining lentil stew and creamy mashed potatoes for a satisfying meal.


Ingredients

  • 1 cup lentils
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon cumin
  • Salt to taste
  • Pepper to taste
  • 2 cups potatoes, peeled and cubed
  • 1/2 cup milk
  • 2 tablespoons butter

Instructions

  1. Rinse lentils under cold water.
  2. In a pot, sauté onion, carrots, and celery until soft.
  3. Add garlic, thyme, and cumin, and cook for 1 minute.
  4. Add lentils and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 30 minutes until lentils are tender.
  6. Meanwhile, boil potatoes in salted water until tender.
  7. Drain potatoes and mash with milk and butter until smooth.
  8. Serve lentil stew over a scoop of mashed potatoes.

Notes

  • Adjust seasoning as desired.
  • Use vegetable broth for a richer flavor.
  • Store leftovers in the fridge for up to 3 days.
