Ingredients

- 1 cup lentils
- 4 cups vegetable broth
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon cumin
- Salt to taste
- Pepper to taste
- 2 cups potatoes, peeled and cubed
- 1/2 cup milk
- 2 tablespoons butter
Instructions
- Rinse lentils under cold water.
- In a pot, sauté onion, carrots, and celery until soft.
- Add garlic, thyme, and cumin, and cook for 1 minute.
- Add lentils and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 30 minutes until lentils are tender.
- Meanwhile, boil potatoes in salted water until tender.
- Drain potatoes and mash with milk and butter until smooth.
- Serve lentil stew over a scoop of mashed potatoes.
Notes
- Adjust seasoning as desired.
- Use vegetable broth for a richer flavor.
- Store leftovers in the fridge for up to 3 days.
