Description

Delicious homemade coffee éclairs filled with cream and topped with chocolate.


Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 2 tablespoons instant coffee
  • 4 ounces dark chocolate

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a saucepan, combine water and butter over medium heat until melted.
  3. Stir in flour until a dough forms.
  4. Remove from heat and let cool slightly.
  5. Beat in eggs one at a time until smooth.
  6. Pipe the dough onto a baking sheet in long strips.
  7. Bake for 25-30 minutes until golden brown.
  8. Let cool completely.
  9. Whip heavy cream with powdered sugar and instant coffee until stiff peaks form.
  10. Fill the cooled éclairs with the coffee cream.
  11. Melt dark chocolate and drizzle over filled éclairs.
