Ingredients

  • 2 celery stalks, sliced
  • 4 cups chicken broth
  • 1 cup cooked chicken, shredded
  • 1 cup cooked rice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and ginger. Sauté until fragrant.
  3. Add carrots and celery. Cook until tender.
  4. Pour in chicken broth and bring to a boil.
  5. Add cooked chicken and rice. Simmer for 10 minutes.
  6. Season with salt and pepper.
  7. Serve hot, garnished with fresh parsley.
