A refreshing and creamy homemade Greek potato salad with fresh ingredients.
Ingredients

- 2 pounds of potatoes, diced
- 1 cup of Greek yogurt
- 1/2 cup of feta cheese, crumbled
- 1/4 cup of olive oil
- 1/4 cup of red onion, finely chopped
- 1/4 cup of fresh parsley, chopped
- 2 tablespoons of lemon juice
- Salt and pepper to taste
Instructions
- Boil the potatoes in salted water until tender, about 15 minutes.
- Drain and let cool.
- In a large bowl, mix Greek yogurt, olive oil, lemon juice, salt, and pepper.
- Add the cooled potatoes, red onion, parsley, and feta cheese to the bowl.
- Toss gently to combine.
- Refrigerate for at least 30 minutes before serving.
Notes
- Serve chilled for best flavor.
- You can add olives for extra flavor.
