- 2 large sweet potatoes
- 1/2 cup crumbled feta cheese
- 1/4 cup honey
- 1 tablespoon olive oil
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and slice the sweet potatoes into 1/4 inch rounds.
- Toss the sweet potato rounds with olive oil, salt, and pepper.
- Arrange the rounds on a baking sheet in a single layer.
- Bake for 25-30 minutes until tender.
- Remove from the oven and drizzle honey over the rounds.
- Sprinkle crumbled feta cheese on top.
- Return to the oven for an additional 5 minutes.
- Garnish with fresh parsley before serving.
