  • 2 acorn squashes, halved and seeded
  • 4 tablespoons honey
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup dried cranberries
  • 1/2 cup cranberry juice
  • 1 tablespoon balsamic vinegar

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the acorn squashes in half and remove the seeds.
  3. In a bowl, mix honey, olive oil, salt, and pepper.
  4. Brush the mixture over the squash halves.
  5. Place the squash on a baking sheet cut side down.
  6. Bake for 25-30 minutes until tender.
  7. In a saucepan, combine cranberry juice and balsamic vinegar. Bring to a simmer and reduce until thickened.
