- 2 acorn squashes, halved and seeded
- 4 tablespoons honey
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 cup feta cheese, crumbled
- 1/4 cup dried cranberries
- 1/2 cup cranberry juice
- 1 tablespoon balsamic vinegar
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the acorn squashes in half and remove the seeds.
- In a bowl, mix honey, olive oil, salt, and pepper.
- Brush the mixture over the squash halves.
- Place the squash on a baking sheet cut side down.
- Bake for 25-30 minutes until tender.
- In a saucepan, combine cranberry juice and balsamic vinegar. Bring to a simmer and reduce until thickened.
- Remove the squash from the oven, flip them cut side up, and drizzle with the cranberry reduction.
- Top with crumbled feta cheese and dried cranberries.
- Serve warm.
