Ingredients

- 1 lb carrots, peeled and cut into sticks
- 3 tbsp honey
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup feta cheese, crumbled
- 1/4 cup pistachios, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix honey, olive oil, salt, and pepper.
- Add carrots to the bowl and toss to coat.
- Spread the carrots on a baking sheet.
- Roast for 25-30 minutes until tender and caramelized.
- Remove from the oven and top with feta and pistachios.
- Serve warm.

- For added flavor, you can sprinkle with fresh herbs.
