Description

Ingredients

  • 1 lb carrots, peeled and cut into sticks
  • 3 tbsp honey
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup pistachios, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix honey, olive oil, salt, and pepper.
  3. Add carrots to the bowl and toss to coat.
  4. Spread the carrots on a baking sheet.
  5. Roast for 25-30 minutes until tender and caramelized.
  6. Remove from the oven and top with feta and pistachios.
  7. Serve warm.
