Description
Honey roasted carrots topped with feta and dill.
Ingredients

- 1 lb carrots, peeled and cut into sticks
- 2 tbsp honey
- 2 tbsp olive oil
- 1/2 cup feta cheese, crumbled
- 2 tbsp fresh dill, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, mix honey, olive oil, salt, and pepper.
- Add the carrots to the bowl and toss until coated.
- Spread the carrots on a baking sheet in a single layer.
- Roast for 25-30 minutes, or until tender and caramelized.
- Remove from the oven and sprinkle feta and dill on top.
- Serve warm.

- Adjust honey according to your taste.
- Fresh dill enhances the flavor.
- Can substitute feta with goat cheese.
