A simple recipe for making perfect beef in the Instant Pot.
Ingredients

- 2 lbs beef roast
- 1 cup beef broth
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
Instructions
- Season the beef roast with salt and pepper.
- Set the Instant Pot to sauté mode and add olive oil.
- Brown the beef on all sides, about 5 minutes.
- Add chopped onion and garlic, and sauté for 2 minutes.
- Pour in the beef broth.
- Add carrots and potatoes.
- Seal the lid and set to pressure cook on high for 60 minutes.
- Let the pressure release naturally for 10 minutes, then quick release any remaining pressure.
- Remove beef and let it rest for 5 minutes before slicing.
Notes
- Adjust cooking time based on beef thickness.
- Use your favorite vegetables.
- Store leftovers in the refrigerator for up to 3 days.
