Ingredients

  • 2 potatoes, diced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions

  1. Season the beef roast with salt and pepper.
  2. Set the Instant Pot to sauté mode and add olive oil.
  3. Brown the beef on all sides, about 5 minutes.
  4. Add chopped onion and garlic, and sauté for 2 minutes.
  5. Pour in the beef broth.
  6. Add carrots and potatoes.
  7. Seal the lid and set to pressure cook on high for 60 minutes.
  8. Let the pressure release naturally for 10 minutes, then quick release any remaining pressure.
  9. Remove beef and let it rest for 5 minutes before slicing.
