- 1 pre-baked pie crust
- 1 cup brewed Irish coffee
- 1 cup heavy cream
- 1/2 cup sugar
- 1/4 cup Irish whiskey
- 2 tablespoons gelatin
- 1/4 cup cold water
- Chocolate shavings for garnish
Instructions
- Prepare the pie crust and set aside.
- In a bowl, dissolve gelatin in cold water.
- In a saucepan, combine brewed coffee, sugar, and whiskey. Heat gently.
- Add dissolved gelatin to the coffee mixture and stir until smooth.
- Remove from heat and let cool slightly.
- Whip the heavy cream until soft peaks form.
- Fold whipped cream into the coffee mixture.
- Pour the mixture into the prepared pie crust.
- Chill in the refrigerator for at least 4 hours.
- Garnish with chocolate shavings before serving.
