A hearty Italian grinder bean salad packed with flavors.
Ingredients

- 1 can of chickpeas, rinsed and drained
- 1 can of kidney beans, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/2 cup bell pepper, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine chickpeas, kidney beans, tomatoes, onion, bell pepper, and parsley.
- In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
- Pour the dressing over the bean salad.
- Toss gently to combine.
- Let it sit for 15 minutes before serving.
Notes
- Serve chilled or at room temperature.
- Add feta cheese for extra flavor.
- Can be stored in the refrigerator for up to 3 days.
