These Italian nut roll cookies are a delightful treat filled with a nut mixture and rolled in powdered sugar.

- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 cup finely chopped walnuts
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the butter and granulated sugar.
- Add flour, salt, and vanilla extract; mix until combined.
- Stir in the chopped walnuts.
- Form the dough into small logs, about 2 inches long.
- Place on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until lightly golden.
- Allow to cool slightly, then roll in powdered sugar.

- Best served fresh, but can be kept for a week.
