- 2 cans white beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- Salt to taste
- Pepper to taste
Instructions
- In a large bowl, combine white beans, cherry tomatoes, red onion, and parsley.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the salad and mix well.
- Let the salad sit for 15 minutes before serving.
- Toss again before serving and adjust seasoning if necessary.
