Kashmiri Pink Chai, also known as Noon Chai, is a traditional tea from Kashmir, famous for its creamy texture and unique pink color. Made with green tea leaves, milk, cardamom, and a touch of salt, this frothy, comforting beverage is a symbol of warmth and hospitality.

- 2 tablespoons green tea leaves
- 4 cups water
- 2 cups whole milk
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 4–5 cardamom pods, crushed
- Optional: sugar or honey, to taste
- Optional: crushed pistachios or almonds, for garnish
- Optional: a pinch of cinnamon or nutmeg
- Optional: 1 drop vanilla extract
Instructions
- Boil 4 cups of water in a saucepan. Add 2 tablespoons green tea leaves and 1/4 teaspoon baking soda. Boil for 10–15 minutes until the tea reduces.
- Whisk the tea vigorously for 5 minutes until it develops a frothy texture and a pink hue.
- Add 2 cups milk and 1/4 teaspoon salt. Stir and simmer for 5–10 minutes. Add 4–5 crushed cardamom pods and simmer 2–3 minutes more.
- Strain the chai into cups to remove tea leaves and cardamom. Garnish with crushed pistachios or almonds. Serve warm and enjoy!
Notes
Avoid adding too much baking soda. Whisk the tea thoroughly to achieve the signature frothy pink color. Strain well for a smooth finish.
