Layered Sweet Potato Lasagna is a hearty and healthy dish that combines sweet potatoes, spinach, and ricotta cheese.
Ingredients

- 3 large sweet potatoes, sliced
- 2 cups fresh spinach
- 2 cups ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix ricotta cheese, egg, garlic powder, salt, pepper, and nutmeg.
- Spread a layer of sweet potato slices at the bottom of a baking dish.
- Add half of the ricotta mixture on top of sweet potatoes.
- Add half of the spinach over the ricotta layer.
- Repeat the layers with remaining ingredients, finishing with a layer of sweet potatoes.
- Top with mozzarella and Parmesan cheese.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake for an additional 15 minutes until cheese is bubbly.
Notes
- Let the lasagna cool for a few minutes before slicing.
- Store leftovers in an airtight container in the fridge.
