Description

Layered Sweet Potato Lasagna is a hearty and healthy dish that combines sweet potatoes, spinach, and ricotta cheese.


Ingredients

  • 3 large sweet potatoes, sliced
  • 2 cups fresh spinach
  • 2 cups ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix ricotta cheese, egg, garlic powder, salt, pepper, and nutmeg.
  3. Spread a layer of sweet potato slices at the bottom of a baking dish.
  4. Add half of the ricotta mixture on top of sweet potatoes.
  5. Add half of the spinach over the ricotta layer.
  6. Repeat the layers with remaining ingredients, finishing with a layer of sweet potatoes.
  7. Top with mozzarella and Parmesan cheese.
  8. Cover with foil and bake for 30 minutes.
  9. Remove foil and bake for an additional 15 minutes until cheese is bubbly.

Notes

  • Let the lasagna cool for a few minutes before slicing.
  • Store leftovers in an airtight container in the fridge.
