Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 4 (8 oz) packages cream cheese, softened
  • 1 cup sour cream
  • 4 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Mix graham cracker crumbs and melted butter in a bowl.
  3. Press mixture into the bottom of a springform pan.
  4. In a large bowl, beat cream cheese and sugar until smooth.
  5. Add sour cream, eggs, lemon juice, and lemon zest; mix until combined.
  6. Pour half the cheesecake batter over the crust.
  7. Drop spoonfuls of blueberries over the batter.
  8. Pour the remaining batter on top and swirl with a knife.
  9. Bake for 60-70 minutes or until set.
  10. Allow to cool before refrigerating for at least 4 hours.
