A delicious and healthy lemon dill chicken bowl recipe.
Ingredients

- 2 chicken breasts
- 1 lemon, juiced
- 2 tablespoons fresh dill, chopped
- 1 tablespoon olive oil
- 1 cup quinoa
- 2 cups water
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix lemon juice, dill, olive oil, salt, and pepper.
- Marinate chicken breasts in the mixture for 30 minutes.
- Cook quinoa according to package instructions.
- Place marinated chicken on a baking sheet and bake for 25-30 minutes.
- Dice cucumber and halve cherry tomatoes.
- Once chicken is cooked, slice it.
- Assemble bowls with quinoa, chicken, cucumber, and tomatoes.

- Adjust seasoning as desired.
- Can substitute quinoa with rice.
