Ingredients

- 1 cup granulated sugar
- 1/2 cup water
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 3 egg whites
- 1/4 teaspoon cream of tartar
- Pinch of salt
Instructions
- In a saucepan, combine sugar and water. Heat over medium until sugar dissolves.
- Add lemon juice and zest. Stir to combine.
- In a bowl, beat egg whites with cream of tartar and salt until soft peaks form.
- Gradually add the sugar mixture to egg whites while beating until stiff peaks form.
- Pipe meringue onto a baking sheet lined with parchment paper.
- Bake at 200°F for 1 hour or until meringue is dry.
- Let cool completely before serving.
