A refreshing pasta salad with lemon vinaigrette, feta cheese, and cranberries.
Ingredients

- 8 oz pasta
- 1/2 cup feta cheese, crumbled
- 1/3 cup dried cranberries
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tsp lemon zest
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped fresh parsley
Instructions
- Cook pasta according to package instructions. Drain and let cool.
- In a bowl, mix olive oil, lemon juice, lemon zest, salt, and pepper.
- Add cooled pasta, cranberries, feta cheese, and parsley to the bowl.
- Toss until well combined.
- Chill in the refrigerator for 30 minutes before serving.
Notes
- Use whole wheat pasta for a healthier option.
- Feel free to add vegetables like cucumbers or bell peppers.
- This salad can be made a day in advance.
