Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 1 cup coconut milk
  • 2 stalks lemongrass, smashed and chopped
  • 8 oz mushrooms, sliced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, minced
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a pot over medium heat.
  2. Add onions, garlic, and ginger. Sauté until fragrant.
  3. Add beef cubes, browning all sides.
  4. Stir in lemongrass, soy sauce, and fish sauce.
  5. Pour in coconut milk and bring to a simmer.
  6. Add mushrooms and cover the pot.
  7. Reduce heat and braise for 1.5 hours until beef is tender.
  8. Season with salt and pepper before serving.
