Ingredients

- 2 lbs beef chuck, cut into cubes
- 1 cup coconut milk
- 2 stalks lemongrass, smashed and chopped
- 8 oz mushrooms, sliced
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 inch ginger, minced
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a pot over medium heat.
- Add onions, garlic, and ginger. Sauté until fragrant.
- Add beef cubes, browning all sides.
- Stir in lemongrass, soy sauce, and fish sauce.
- Pour in coconut milk and bring to a simmer.
- Add mushrooms and cover the pot.
- Reduce heat and braise for 1.5 hours until beef is tender.
- Season with salt and pepper before serving.
Notes
- Serve with rice or noodles.
- Adjust seasoning to taste.
- Store leftovers in the fridge for up to 3 days.
