- 12 oz ziti pasta
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 zucchini, diced
- 1 cup mushrooms, sliced
- 2 cups spinach
- 24 oz marinara sauce
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the ziti pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add onion and garlic, sauté until translucent.
- Add bell pepper, zucchini, and mushrooms. Cook until tender.
- Stir in spinach and cook until wilted.
- Add marinara sauce, ricotta cheese, oregano, and basil. Mix well.
- Combine the cooked ziti with the vegetable mixture and half of the mozzarella cheese.
- Transfer to a baking dish and top with remaining mozzarella and Parmesan cheese.
- Bake for 25-30 minutes until cheese is bubbly and golden.
Notes
- Feel free to add your favorite vegetables.
- Can be made ahead and refrigerated before baking.
- Store leftovers in an airtight container in the fridge.
