Ingredients

  • 12 oz ziti pasta
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 zucchini, diced
  • 1 cup mushrooms, sliced
  • 2 cups spinach
  • 24 oz marinara sauce
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the ziti pasta according to package instructions. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat.
  4. Add onion and garlic, sauté until translucent.
  5. Add bell pepper, zucchini, and mushrooms. Cook until tender.
  6. Stir in spinach and cook until wilted.
  7. Add marinara sauce, ricotta cheese, oregano, and basil. Mix well.
  8. Combine the cooked ziti with the vegetable mixture and half of the mozzarella cheese.
  9. Transfer to a baking dish and top with remaining mozzarella and Parmesan cheese.
  10. Bake for 25-30 minutes until cheese is bubbly and golden.
