A delicious and filling loaded veggie cheese omelette.
Ingredients

- 3 large eggs
- 1/4 cup shredded cheese
- 1/4 cup bell peppers, diced
- 1/4 cup onions, diced
- 1/4 cup spinach, chopped
- Salt to taste
- Pepper to taste
- 1 tablespoon olive oil
Instructions
- In a bowl, whisk the eggs with salt and pepper.
- Heat olive oil in a skillet over medium heat.
- Add onions and bell peppers, sauté until soft.
- Add spinach and cook until wilted.
- Pour the eggs over the veggies in the skillet.
- Sprinkle cheese on top.
- Cook until the edges are set, then fold the omelette.
- Serve hot.

- Feel free to add any other vegetables you like.
