Ingredients

- 250g Lotus Biscoff cookies
- 500g mascarpone cheese
- 300ml heavy cream
- 100g powdered sugar
- 1 tsp vanilla extract
- 100ml milk
Instructions
- Crush the Lotus Biscoff cookies into fine crumbs.
- In a bowl, mix mascarpone cheese, powdered sugar, and vanilla extract until smooth.
- In another bowl, whip the heavy cream until stiff peaks form.
- Fold the whipped cream into the mascarpone mixture.
- Dip each cookie briefly in milk to soften.
- Layer the softened cookies and mascarpone mixture in a dish.
- Repeat layers until all ingredients are used.
- Chill in the fridge for at least 4 hours before serving.
Notes
- For a richer flavor, add a layer of melted chocolate.
- Adjust the sweetness by varying the amount of sugar.
- You can use a different type of cookie if desired.
