Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a cupcake tin with paper liners.
  3. In a bowl, cream together the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the milk, lemon juice, and lemon zest.
  6. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  7. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  8. Gently fold in the raspberries.
  9. Fill cupcake liners about two-thirds full with the batter.
