- 1/4 cup maple syrup
- 2 tablespoons Dijon mustard
- 2 sweet potatoes, diced

- 1 zucchini, sliced

Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix maple syrup and Dijon mustard.
- Coat chicken breasts with the maple Dijon mixture.
- Place chicken on a baking sheet.
- Toss sweet potatoes, bell pepper, and zucchini with olive oil, salt, and pepper.
- Spread veggies around the chicken on the baking sheet.
- Bake for 25-30 minutes or until chicken is cooked through.
- Let rest for 5 minutes, then slice chicken.
- Serve chicken over roasted veggies and sweet potatoes.
