- 2 large sweet potatoes, peeled and cubed

- 1/4 cup maple syrup

Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine sweet potatoes, olive oil, maple syrup, salt, and pepper. Toss well to coat.
- Spread the mixture evenly on a baking sheet.
- Roast for 25-30 minutes, stirring halfway through, until sweet potatoes are tender and caramelized.
- Remove from the oven and let cool slightly.
- Top with goat cheese and pecans before serving.
