Ingredients

- 1 lb ground beef
- 1 cup rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 can diced tomatoes
- 1 bell pepper, chopped
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup corn
- Fresh cilantro for garnish
Instructions
- In a pot, brown the ground beef over medium heat.
- Add onion and garlic, sauté until soft.
- Stir in the diced tomatoes, bell pepper, cumin, chili powder, salt, and pepper.
- Add beef broth and bring to a boil.
- Add rice and corn, simmer for 20 minutes.
- Serve hot, garnished with fresh cilantro.
