Ingredients

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 1/2 pound raw tuna, diced
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce
  • 1 teaspoon chili powder
  • Salt to taste

Instructions

  1. Rinse sushi rice under cold water.
  2. Combine rice and water in a pot. Bring to a boil, then cover and simmer for 20 minutes.
  3. Remove rice from heat and let it sit covered for 10 minutes.
  4. In a bowl, mix tuna, lime juice, soy sauce, chili powder, and salt.
  5. Fluff the rice and divide it into bowls.
  6. Top rice with tuna, avocado, cherry tomatoes, red onion, and cilantro.
  7. Serve immediately.
