Ingredients

  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1/4 cup brown sugar
  • 1/2 cup heavy cream
  • 1/2 cup butterscotch chips
  • 1 egg yolk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, butter, sugar, and salt until crumbly.
  3. Press the mixture into mini tart pans.
  4. Bake for 10-12 minutes until golden.
  5. In a saucepan, combine brown sugar, heavy cream, and butterscotch chips over medium heat.
  6. Stir until melted and smooth.
  7. Remove from heat and add egg yolk and vanilla extract.
  8. Pour the filling into the baked tart shells.
  9. Bake for an additional 10 minutes.
  10. Allow to cool before serving.
