- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1/2 cup sour cream
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup heavy cream
- 1/4 cup granulated sugar for topping
Instructions
- Preheat your oven to 325°F (163°C).
- In a bowl, beat the cream cheese and sugar until smooth.
- Add sour cream, eggs, vanilla, and heavy cream. Mix until combined.
- Pour the mixture into mini cheesecake cups.
- Bake for 20-25 minutes or until set.
- Let cool, then refrigerate for at least 2 hours.
- Sprinkle sugar on top and caramelize with a kitchen torch.
Notes
- Use a torch for best results when caramelizing.
- Store in the refrigerator for up to 3 days.
- Allow cheesecakes to cool completely before refrigerating.
