- 1 cup crushed graham crackers
- 1/4 cup melted butter
- 2 cups cream cheese
- 1/2 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 can pineapple slices
- 8 maraschino cherries
- 1/4 cup brown sugar
Instructions
- Preheat your oven to 350°F (175°C).
- Mix crushed graham crackers and melted butter in a bowl.
- Press the mixture into the bottom of muffin tins.
- In another bowl, beat cream cheese and sugar until smooth.
- Add eggs and vanilla extract, mix well.
- Place a pineapple slice on top of each crust.
- Spoon cheesecake mixture over the pineapple.
- Sprinkle brown sugar on top of the cheesecakes.
- Bake for 20-25 minutes or until set.
- Cool and refrigerate before serving.
