Ingredients

  • 1 cup crushed graham crackers
  • 1/4 cup melted butter
  • 2 cups cream cheese
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 can pineapple slices
  • 8 maraschino cherries
  • 1/4 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix crushed graham crackers and melted butter in a bowl.
  3. Press the mixture into the bottom of muffin tins.
  4. In another bowl, beat cream cheese and sugar until smooth.
  5. Add eggs and vanilla extract, mix well.
  6. Place a pineapple slice on top of each crust.
  7. Spoon cheesecake mixture over the pineapple.
  8. Sprinkle brown sugar on top of the cheesecakes.
  9. Bake for 20-25 minutes or until set.
  10. Cool and refrigerate before serving.
