  • 1 tsp paprika
  • 1/2 tsp turmeric
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Rinse the lentils under cold water.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onion, carrots, and celery. Sauté for 5 minutes.
  4. Add garlic and cook for 1 minute.
  5. Add lentils, diced tomatoes, vegetable broth, and spices.
  6. Bring to a boil, then reduce heat and simmer for 30-35 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh cilantro.
