A flavorful Moroccan potato tagine made with spices and vegetables.
Ingredients

- 4 medium potatoes, peeled and cubed
- 1 onion, chopped
- 2 carrots, sliced
- 1 bell pepper, chopped
- 2 tomatoes, chopped
- 3 cloves of garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1/2 tsp turmeric
- 2 cups vegetable broth
- Salt to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a tagine or pot over medium heat.
- Add chopped onion and garlic, sauté until soft.
- Add potatoes, carrots, and bell pepper; stir well.
- Add chopped tomatoes and spices. Mix thoroughly.
- Pour in vegetable broth, cover, and simmer for 30-40 minutes until vegetables are tender.
- Garnish with fresh parsley before serving.
Notes
- Serve with crusty bread or couscous.
- Adjust spices to your preference.
- Can add chickpeas for extra protein.
