Ingredients

  • 4 sheets nori
  • 1/2 pound smoked salmon
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • Soy sauce for serving

Instructions

  1. Rinse sushi rice under cold water until the water runs clear.
  2. Combine sushi rice and water in a rice cooker and cook according to the manufacturer’s instructions.
  3. In a small saucepan, heat rice vinegar, sugar, and salt until dissolved.
  4. Once rice is cooked, transfer to a bowl and mix in the vinegar mixture.
  5. Let the rice cool to room temperature.
  6. Lay a sheet of nori on a bamboo mat, shiny side down.
  7. Spread a thin layer of rice over the nori, leaving a 1-inch border at the top.
  8. Place smoked salmon, avocado, and cucumber in a line across the rice.
  9. Roll the sushi tightly from the bottom up, using the mat to help.
  10. Seal the edge with a little water.
  11. Slice the roll into bite-sized pieces and serve with soy sauce.
