A classic candy recipe that is light and fluffy with a sweet flavor.
Ingredients

- 2 cups granulated sugar
- 1/2 cup light corn syrup
- 1/2 cup water
- 2 egg whites
- 1 teaspoon vanilla extract
- 1 cup chopped nuts (optional)
Instructions
- In a saucepan, combine sugar, corn syrup, and water.
- Cook over medium heat until sugar dissolves.
- Bring to a boil and cook without stirring until it reaches the soft-ball stage (240°F).
- While syrup is cooking, beat egg whites in a separate bowl until stiff peaks form.
- Slowly pour hot syrup into beaten egg whites while mixing.
- Add vanilla and continue mixing until the mixture thickens.
- If using, fold in chopped nuts.
- Drop spoonfuls onto wax paper and let cool.
