Ingredients

  • 1/2 cup light corn syrup
  • 1/2 cup water
  • 2 egg whites
  • 1 teaspoon vanilla extract
  • 1 cup chopped nuts (optional)

Instructions

  1. In a saucepan, combine sugar, corn syrup, and water.
  2. Cook over medium heat until sugar dissolves.
  3. Bring to a boil and cook without stirring until it reaches the soft-ball stage (240°F).
  4. While syrup is cooking, beat egg whites in a separate bowl until stiff peaks form.
  5. Slowly pour hot syrup into beaten egg whites while mixing.
  6. Add vanilla and continue mixing until the mixture thickens.
  7. If using, fold in chopped nuts.
  8. Drop spoonfuls onto wax paper and let cool.
