Description
A hearty one-pot soup inspired by the classic Philly cheesesteak.
Ingredients

- 1 lb beef steak, sliced thin
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups potatoes, diced
- 1 cup heavy cream
- 1 cup provolone cheese, shredded
- Salt and pepper to taste
Instructions
- In a large pot, brown the beef over medium heat.
- Add onion, bell pepper, and garlic. Cook until softened.
- Pour in the beef broth and add potatoes. Bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Stir in heavy cream and cheese until melted.
- Season with salt and pepper. Serve hot.
Notes
- For a spicier soup, add jalapeños.
- You can substitute chicken for beef.
- Store leftovers in an airtight container in the fridge.
