Ingredients

  • 1 cup elbow macaroni
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup corn, frozen
  • 1 cup shredded cheese (optional)

Instructions

  1. In a large pot, sauté onion and garlic until softened.
  2. Add chili powder, cumin, and paprika. Stir for one minute.
  3. Add diced tomatoes, vegetable broth, black beans, kidney beans, corn, and pasta.
  4. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Stir occasionally until pasta is cooked.
  6. If desired, stir in cheese until melted.
