Description
A hearty and flavorful one pot vegetarian chili mac dish.
Ingredients

- 1 cup elbow macaroni
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 can diced tomatoes
- 2 cups vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup corn, frozen
- 1 cup shredded cheese (optional)
Instructions
- In a large pot, sauté onion and garlic until softened.
- Add chili powder, cumin, and paprika. Stir for one minute.
- Add diced tomatoes, vegetable broth, black beans, kidney beans, corn, and pasta.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Stir occasionally until pasta is cooked.
- If desired, stir in cheese until melted.
Notes
- Adjust spices to your taste.
- Add more vegetables if desired.
- This dish can be stored in the fridge for up to 3 days.
