- 1 package (9 ounces) cheese tortellini
- 1 can (15 ounces) enchilada sauce
- 1 cup shredded cheese
- 1 cup corn
- 1 can (black beans, drained and rinsed)
- 1 teaspoon cumin
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add corn and black beans, sauté for 5 minutes.
- Stir in the enchilada sauce and cumin.
- Add cheese tortellini and simmer for 8-10 minutes.
- Top with shredded cheese and cover until melted.
