- 1 lb fresh salmon fillet
- 2 cups sushi rice
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 1/2 cup cucumber, thinly sliced
- 1/4 cup avocado, diced
- 2 sheets nori, cut into small squares
- Soy sauce for serving
Instructions
- Preheat your oven to 375°F (190°C).
- Cook sushi rice according to package instructions.
- Mix rice vinegar, sugar, and salt in a bowl. Stir until dissolved.
- Add the mixture to the cooked rice and mix well.
- Cut salmon into bite-sized pieces.
- Place a small amount of rice on a nori square.
- Add a piece of salmon, cucumber, and avocado on top.
- Fold the nori over the filling to form a bite.
- Place the bites on a baking sheet and bake for 15 minutes.
- Serve with soy sauce.
Notes
- You can use other types of fish if desired.
- Adjust toppings to your liking.
