Ingredients

  • 1 lb fresh salmon fillet
  • 2 cups sushi rice
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/2 cup cucumber, thinly sliced
  • 1/4 cup avocado, diced
  • 2 sheets nori, cut into small squares
  • Soy sauce for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook sushi rice according to package instructions.
  3. Mix rice vinegar, sugar, and salt in a bowl. Stir until dissolved.
  4. Add the mixture to the cooked rice and mix well.
  5. Cut salmon into bite-sized pieces.
  6. Place a small amount of rice on a nori square.
  7. Add a piece of salmon, cucumber, and avocado on top.
  8. Fold the nori over the filling to form a bite.
  9. Place the bites on a baking sheet and bake for 15 minutes.
  10. Serve with soy sauce.
