A rich and creamy pecan cheesecake topped with caramel and pecans.
Ingredients

- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup sugar, divided
- 4 (8 ounce) packages cream cheese, softened
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
- 1/2 cup caramel sauce
Instructions
- Preheat oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
- In a large bowl, beat cream cheese and 1 cup sugar until smooth.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla and chopped pecans.
- Pour mixture over crust in the springform pan.
- Bake for 55-60 minutes until set.
- Let cool, then refrigerate for at least 4 hours.
- Before serving, drizzle with caramel sauce and top with additional pecans.
Notes
- Make sure cream cheese is fully softened for best results.
- Allow cheesecake to cool completely before refrigerating.
