A delicious pecan upside down cake with a caramel topping.
Ingredients

- 1 cup pecans
- 1/2 cup butter
- 1 cup brown sugar
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, melt butter and brown sugar over medium heat.
- Stir in pecans and pour mixture into the bottom of a cake pan.
- In a bowl, mix flour, baking powder, baking soda, and salt.
- In another bowl, beat together granulated sugar, eggs, buttermilk, and vanilla.
- Combine wet and dry ingredients until just mixed.
- Pour batter over the pecan mixture in the pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let it cool for 10 minutes, then invert onto a plate to serve.
Notes
- Use fresh pecans for the best flavor.
- Store leftovers in an airtight container.
- Serve warm with whipped cream or ice cream.
