- 1/2 cup chia seeds
- 1 cup fresh pineapple, diced
- 2 tablespoons honey or maple syrup

Instructions
- In a bowl, mix coconut milk, chia seeds, honey, and vanilla extract.
- Stir well to combine and let it sit for 10 minutes.
- Stir again to prevent clumping.
- Cover and refrigerate for at least 2 hours or overnight.
- Before serving, layer with diced pineapple.

- For a thicker pudding, use more chia seeds.
