Ingredients

- 1 fresh pineapple, peeled and sliced
- 2 cups granulated sugar
- 1 cup apple cider vinegar
- 1 tablespoon red pepper flakes
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
Instructions
- Prepare the pineapple by peeling and slicing it.
- In a pot, combine sugar, vinegar, red pepper flakes, cinnamon, and ginger.
- Heat the mixture over medium heat until the sugar dissolves.
- Add the pineapple slices to the pot and bring to a boil.
- Reduce heat and simmer for 10 minutes.
- Remove from heat and let cool.
- Transfer to jars and refrigerate.
Notes
- Adjust spice level by changing red pepper flakes.
- Store in the refrigerator for up to a month.
