A delicious twist on classic cheesecake with a caramelized pineapple topping.
Ingredients

- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 can (20 oz) pineapple slices, drained
- 1/2 cup brown sugar
- 1/4 cup maraschino cherries
Instructions
- Preheat oven to 350°F (175°C).
- Mix graham cracker crumbs and melted butter; press into the bottom of a springform pan.
- In a bowl, beat cream cheese, sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well after each.
- Pour cream cheese mixture over the crust.
- Arrange pineapple slices on top, sprinkle with brown sugar, and add cherries in the centers.
- Bake for 50-60 minutes or until set.
- Let it cool, then refrigerate for at least 4 hours before serving.
Notes
- Use fresh pineapple for a different flavor.
- Store leftovers in the refrigerator.
- Top with whipped cream if desired.
