A sweet and moist pineapple upside down cake with a sugar twist.
Ingredients

- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter
- 1/2 cup brown sugar
- 1 can sliced pineapple (in juice)
- 2 large eggs
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a round cake pan.
- Arrange pineapple slices at the bottom of the pan.
- Melt butter and mix with brown sugar, pour over pineapple.
- In a bowl, cream together granulated sugar and butter.
- Add eggs and vanilla; mix well.
- Combine flour, baking powder, and salt; add to creamed mixture.
- Pour batter over pineapple.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let it cool for 10 minutes, then invert onto a plate.
Notes
- Use fresh pineapple for better flavor.
- Serve warm or at room temperature.
- Can be stored in an airtight container for up to 3 days.
