Delicious pineapple upside down sugar cookies with a tropical twist.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup crushed pineapple, drained
- 1/2 cup brown sugar
- Maraschino cherries for topping
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the butter and granulated sugar.
- Add eggs one at a time, mixing well after each.
- In another bowl, combine flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture.
- Stir in vanilla extract and crushed pineapple.
- In a separate pan, melt brown sugar and spread it evenly on the bottom.
- Spoon the cookie dough over the brown sugar mixture.
- Top each cookie with a Maraschino cherry.
- Bake for 12-15 minutes or until golden brown.
