  • 1/2 cup brown sugar
  • Maraschino cherries for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the butter and granulated sugar.
  3. Add eggs one at a time, mixing well after each.
  4. In another bowl, combine flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture.
  6. Stir in vanilla extract and crushed pineapple.
  7. In a separate pan, melt brown sugar and spread it evenly on the bottom.
  8. Spoon the cookie dough over the brown sugar mixture.
  9. Top each cookie with a Maraschino cherry.
  10. Bake for 12-15 minutes or until golden brown.
