Ingredients

  • 2 cups cream cheese, softened
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Blend pistachios in a food processor until finely ground.
  3. In a large bowl, mix cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in heavy cream, vanilla, salt, and ground pistachios.
  6. Pour mixture into a greased springform pan.
  7. Bake for 25-30 minutes until the top is browned and the center is slightly jiggly.
  8. Let it cool before refrigerating for at least 4 hours.
