A rich and creamy cheesecake infused with the flavor of pistachios, inspired by the Basque style of baking.
Ingredients

- 1 1/2 cups pistachios, shelled
- 2 cups cream cheese, softened
- 1 cup heavy cream
- 3/4 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 400°F (200°C).
- Blend pistachios in a food processor until finely ground.
- In a large bowl, mix cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in heavy cream, vanilla, salt, and ground pistachios.
- Pour mixture into a greased springform pan.
- Bake for 25-30 minutes until the top is browned and the center is slightly jiggly.
- Let it cool before refrigerating for at least 4 hours.
Notes
- Serve chilled for the best flavor.
- Top with chopped pistachios for garnish.
- Can be made a day in advance.
